Cauliflower mac and cheese

Indulge in a delicious cheesy cauliflower pasta bake that's perfect for family meals.
Ingredients:
  • 150g macaroni
  • 1 small cauliflower, cut into small florets
  • 500ml milk
  • 40.00 gm Butter Soft Spread
  • 35g plain flour
  • 0.63 gm ground nutmeg
  • 120g tasty cheese
  • 100g mozzarella
  • 62.50 ml chives, chopped
  • 150g ciabatta or Turkish bread, torn into small pieces
  • 60g Butter Spread, extra, melted
  • 1 garlic clove, crushed
Instructions:
  • Preheat the oven to 200C. Grease a 10-cup (2.5L) ovenproof dish. Boil pasta in a large saucepan for 3 mins. Add cauliflower and cook for another 8-10 mins until pasta is al dente and cauliflower is tender. Drain and return to the pan.
  • In a medium saucepan over medium heat, mix together the milk, spread, flour, and nutmeg. Whisk constantly for 4-5 minutes until the mixture boils and thickens. Season to taste. In a large bowl, combine the tasty cheese and mozzarella.
  • Combine the sauce, half of the chives, and half of the cheese mixture with the pasta gently. Transfer the mixture into a prepared dish. In a medium bowl, toss together the bread, extra spread, garlic, and the remaining chives and cheese mixture. Sprinkle this over the pasta. Bake for 15-20 minutes until golden brown.
