Indulgent roasted cauliflower "mac" and cheese - a comforting twist on the classic favorite.
Ingredients:
  • 1 head cauliflower, broken into florets
  • cooking spray
  • salt and ground black pepper to taste
  • 2 cups half-and-half
  • 2 cups shredded Mexican cheese blend
  • 1 cup shredded Cheddar cheese
  • 2 tablespoons cream cheese
  • 1 teaspoon unsalted butter, or as needed
Instructions:
  • Prepare all ingredients.
  • Preheat your oven to 375°F (190°C) for the perfect cooking temperature.
  • Coat cauliflower florets evenly with cooking spray and season generously with salt and pepper before transferring them to a baking sheet.
  • Let it roast in the oven until golden and crispy for 30 minutes.
  • Heat the half-and-half in a saucepan over gentle heat, then slowly melt in the Mexican, Cheddar, and cream cheeses, stirring until combined.
  • Grease an 8x10-inch baking dish with butter. Combine roasted cauliflower with a creamy cheese sauce and then place the mixture into the prepared dish.
  • Bake until bubbly in the preheated oven for approximately 15 minutes.
