Perfect Italiano's Cauliflower & Bacon Mac 'n' Cheese Bake
Ingredients:
  • 400g macaroni pasta
  • 36.40 gm olive oil
  • 6 rashers bacon, rind removed
  • 40g butter
  • 40g (1/4 cup) plain flour
  • 500ml (2 cups) milk
  • 200g (2 cups) cheese
  • 300g cauliflower, cut into florets, lightly steamed
  • 55g (3/4 cup) fresh breadcrumbs (made from day-old bread)
  • 20.00 ml fresh thyme leaves
Instructions:
  • Preheat your oven to 200C/180C fan forced. Cook the pasta in a large saucepan of boiling water according to packet instructions until it's just al dente. Drain the pasta and transfer it to a large bowl.
  • Heat 1 tablespoon of oil in a medium saucepan over medium-high heat. Cook the bacon in batches for 2-3 minutes per side until crispy. Transfer to a paper-towel-lined plate to drain and then roughly chop.
  • In a saucepan over medium heat, melt the butter until foamy. Stir in the flour and cook for 1-2 minutes until it bubbles. Remove from heat and gradually whisk in the milk until smooth. Return to heat and stir for 5 minutes until thickened. Add 1 cup of Perfect ItalianoTM Perfect Bakes cheese, then combine with pasta, bacon, and cauliflower. Season to taste and transfer to a large baking dish.
  • Mix thyme and the rest of the olive oil with the breadcrumbs. Sprinkle over the pasta and add the remaining Perfect Bakes cheese on top. Bake until golden, about 20-25 minutes. Let it rest for 5 minutes before serving.
