Cauliflower and gruyere bakes

Cheesy low-fat cauliflower bakes - a delicious twist for any meal.
Ingredients:
  • 1/2 (about 550g) cauliflower, cut into florets
  • 1 leek, pale section only, thinly sliced, washed, dried
  • 100g gruyere, coarsely grated
  • 20.00 ml plain flour
  • 250ml (1 cup) fat-free milk
  • Salt & freshly ground black pepper
  • 30.00 ml dried (packaged) breadcrumbs
Instructions:
  • Preheat the oven to 200°C. Boil cauliflower in salted water until tender, then add leek 1 minute before draining and setting aside.
  • In a small saucepan, blend the gruyere and flour together. Slowly mix in the milk. Cook over medium heat, stirring constantly, until the sauce slightly thickens, about 2-3 minutes.
  • Divide the creamy cauliflower and leek mixture into four 250ml (1 cup) ovenproof dishes. Season with salt and pepper, then top with gruyere sauce and breadcrumbs. Bake at a high temperature until golden brown, then serve piping hot.
