Upgrade cauliflower with Gruyere and curry powder for a delectable gratin that’s sure to please!
Ingredients:
  • 1 head cauliflower, cut into florets
  • 2 cups whole milk
  • 4 tablespoons unsalted butter, divided
  • 3 tablespoons all-purpose flour
  • 1 cup shredded Gruyere cheese, divided
  • 0.25 cup grated Parmesan cheese
  • 0.25 cup minced onion
  • 3 teaspoons Madras curry powder, or to taste
  • 0.25 teaspoon ground black pepper
  • 0.25 cup fresh bread crumbs
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C), and generously coat a medium baking dish with cooking spray.
  • 1. Boil water in a pot. Cook cauliflower florets until tender but still firm, about 4 to 5 minutes. Drain and set aside.
  • Microwave or heat milk in a small saucepan until hot.
  • In a saucepan over medium heat, melt 2 tablespoons of butter. Add flour and cook for 2 to 3 minutes, stirring constantly. Slowly pour in hot milk and whisk until thickened, about 4 to 5 minutes. Remove from heat and mix in 3/4 cup Gruyere cheese, Parmesan cheese, minced onion, curry powder, salt, and pepper.
  • Start by cascading one-third of the savory sauce onto the base of the baking dish. Carefully scatter the cauliflower evenly on top. Finally, drizzle the remaining creamy cheese sauce over the cauliflower florets.
  • In a bowl, mix the remaining 1/4 cup of Gruyere cheese with bread crumbs. Sprinkle this mixture over the sauce and finish by drizzling the remaining 2 tablespoons of butter.
  • Bake until the top is beautifully golden brown, about 25-30 minutes in the preheated oven.
