Cauliflower and millet mash

Elevate your side dishes with our tasty cauliflower and millet mash recipe!
Ingredients:
  • 20g butter
  • 1 small brown onion, finely chopped
  • 82.50 ml millet, rinsed, drained (see notes)
  • 1/4 cauliflower head, cut into florets
  • 27.30 gm extra virgin olive oil, plus extra to serve
  • 40.00 ml roughly chopped fresh chives
Instructions:
  • In a frying pan over medium heat, melt butter. Sauté onion for 8 minutes until softened but not browned. Stir in garlic and cook for 1 more minute until fragrant. Take the pan off the heat.
  • In a medium saucepan over high heat, combine millet and 2 1/2 cups water. Bring to a boil, then reduce heat to medium and simmer covered for 20 minutes until millet is almost tender.
  • Add the cauliflower and simmer covered for an additional 20 minutes or until the millet and cauliflower are tender.
  • Combine the oil and onion mixture, then season with salt and pepper. Blend using a food processor or stick blender until smooth. Let the mash stand for 10 minutes to thicken. Finish by drizzling with extra oil and sprinkling with chives before serving.
