Cheesy cauliflower au gratin - the ultimate indulgent side dish!
Ingredients:
  • 1 head cauliflower, cut into florets
  • 2 tablespoons butter
  • 1 small onion, chopped
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • 6 ounces shredded Cheddar cheese, divided
  • 1 pinch ground black pepper
  • 1 pinch ground nutmeg, or to taste
Instructions:
  • 1. Set up the steamer by placing it into a saucepan and filling with water right below the steamer rack. 2. Bring the water to a boil. 3. Put the cauliflower in the steamer, cover it, and steam until tender for 5 to 7 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C) and grease a 9x9-inch baking dish.
  • In a small saucepan, melt butter over low heat. Sauté onion in the butter until softened, about 5 minutes. Stir in flour and cook until slightly browned, 3 to 5 minutes. Gradually whisk in milk until a smooth sauce forms. Simmer gently until thickened.
  • Take the sauce off the heat and mix in half of the Cheddar cheese until it melts; then, sprinkle with pepper and nutmeg for a burst of flavors.
  • Transfer the perfectly steamed cauliflower to the baking dish and generously coat it with the velvety cheese sauce. Finish by delicately sprinkling the remaining sharp Cheddar cheese on top.
  • Bake in the hot oven until the cheese is gooey and golden brown, for approximately 25 minutes.
