Spicy red pepper cauliflower gratin- a creamy, cheesy side with a kick. Perfect for busy weeknights.
Ingredients:
  • 1 large head cauliflower, cut into bite-size pieces
  • 1 cup light sour cream
  • 0.5 cup diced onion
  • 3 tablespoons melted butter
  • 2 tablespoons red pepper flakes, or to taste
  • 0.5 cup panko bread crumbs
Instructions:
  • Preheat the oven to 350°F (175°C) for a perfectly cooked dish.
  • 1. Boil a generous amount of water in a large pot. Add cauliflower and simmer uncovered until soft, approximately 10 minutes. Drain well.
  • In a baking dish, blend sour cream, Cheddar cheese, onion, melted butter, red pepper flakes, and salt. Add cauliflower and top with bread crumbs.
  • Bake until golden and bubbly, with gooey melted cheese, around 30 minutes in the preheated oven.
