Create a fancy Mother's Day feast with this simple, kid-friendly dish.
Ingredients:
  • Melted Butter Pat Salted, to grease
  • 800g cauliflower, cut into small florets
  • 50g Salted Butter
  • 40g (1/4 cup) plain flour
  • 600ml milk
  • 80g (1 cup) coarsely grated cheddar
  • White pepper
  • 55g (3/4 cup) fresh breadcrumbs (made from day-old bread)
  • 25g butter, extra, melted
Instructions:
  • Gently coat a 1.25L (6-cup capacity) ovenproof dish with melted butter.
  • Boil cauliflower in seasoned water until tender, approximately 5 minutes. Drain and place in the dish.
  • While the butter is melting in a saucepan over medium heat until foamy, add flour and stir for 2 minutes or until the mixture starts bubbling. Remove from heat and slowly pour in the milk, stirring constantly until smooth. Return to medium-high heat and cook while stirring for 5 minutes until the sauce boils and thickens. Remove from heat, then mix in the majority of the cheddar. Season with salt and white pepper before pouring over the cauliflower.
  • 1. Preheat the grill on high heat. 2. Sprinkle breadcrumbs over the cauliflower mixture. 3. Drizzle extra butter over the mixture and top with remaining cheddar. 4. Place the dish about 10cm from the heat source and grill for about 5 minutes until golden brown.
