Quick and easy single-serve vegetable chowder ready in 10 minutes without potatoes.
Ingredients:
  • 1 tray cauliflower & cheese sauce (from 17-oz package)
  • 1 tray corn & butter sauce (from 17-oz package)
  • 1/2 cup fat-free (skim) milk
  • 1 tablespoon from 1 can (4 oz) Old El Paso™ Chopped Green Chiles
  • 1/4 teaspoon ground cumin
  • Black pepper, if desired
Instructions:
  • Cook cauliflower and corn in the microwave according to package instructions; then, set the corn aside.
  • In a 1 1/2-quart saucepan, combine cauliflower with all ingredients except corn. Bring to a boil, then simmer for 2 minutes.
  • Take the mixture off the heat and gently mash the cauliflower using a potato masher or fork. Add corn, cook and stir for 1 to 2 minutes until heated through.
