Elevate mashed potatoes with cauliflower and parmesan for a nutty twist.
Ingredients:
  • 1kg White Potatoes, peeled, chopped
  • 600g cauliflower, cut into small florets
  • 125ml cream
  • 40g parmesan
Instructions:
  • Bring a large saucepan of water to a boil over high heat. Add the potato and cauliflower, cooking for 15 minutes until tender. Drain well and return to the pan.
  • Mash potato and cauliflower until almost smooth using a potato masher or fork. Place over low heat, then stir in cream, parmesan, and butter. Cook for 2-3 minutes until butter melts and mixture is well combined. Season to taste and remove from heat.
