Cauliflower pakoras

Crispy spiced cauliflower bites paired with refreshing tzatziki dipping sauce.
Ingredients:
  • 190g (1 1/4 cups) plain flour
  • 5.00 gm ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp chilli powder
  • 1/2 tsp turmeric
  • 1 egg yolk
  • 250ml (1 cup) water
  • 300g cauliflower, trimmed, cut into florets
  • Vegetable oil, to deep-fry
  • Fresh coriander sprigs, to serve
  • Tzatziki, to serve
Instructions:
  • In a bowl, mix flour, cumin, ground coriander, chili, and turmeric. Create a well in the center and add the egg yolk. Slowly whisk in the water until a smooth batter forms. Cover and refrigerate for 30 minutes before using.
  • Simmer cauliflower in boiling water until tender, about 3 minutes. Drain.
  • Heat oil in a large, deep saucepan or wok until it reaches 170°C (check readiness by ensuring a bread cube turns golden in 20 seconds). Coat cauliflower in batter, then fry half of it for 3 minutes until crispy and golden. Transfer to a paper towel-lined plate using a slotted spoon. Repeat with the remaining cauliflower, reheating oil as needed.
  • Transfer the cauliflower to a beautiful serving bowl, sprinkle with fragrant fresh coriander, season with a touch of salt, and accompany with a side of tzatziki.
