Whip up this easy and exotic dish bursting with bold flavors.
Ingredients:
  • 250g orecchiette pasta
  • 1/2 head cauliflower, cut into small florets
  • 60ml olive oil
  • 105g breadcrumbs
  • 2 garlic cloves, crushed
  • 2 long fresh red chillies, seeded, finely chopped
  • 2 anchovy fillets, finely chopped (optional)
  • 40g almond
  • 250.00 ml coarsely chopped flat-leaf parsley
  • Shaved pecorino, to serve
  • Mixed salad leaves, to serve
Instructions:
  • Cook the pasta according to the package instructions until it's perfectly firm, then add the cauliflower during the last 5 minutes of cooking. Drain thoroughly.
  • Heat oil in a large frying pan over medium heat. Cook breadcrumbs, stirring, for 5 minutes until golden brown. Stir in garlic, chili, and anchovy and cook for 1 minute until fragrant. Remove from heat and mix in pasta, cauliflower, almonds, and parsley. Gently combine and season with salt and pepper to taste.
  • Divide the pasta evenly among serving bowls. Sprinkle with pecorino cheese and serve promptly with optional salad leaves.
