Whip up a quick and delicious cauliflower pasta with fresh basil and Parmesan for a meatless weeknight dinner.
Ingredients:
  • 500g small pasta shells
  • 125ml olive oil
  • 1/2 large cauliflower, cut into small florets
  • 5 garlic cloves, sliced
  • 2 long red chillies, thinly sliced
  • 120g pea
  • 40g parmesan
  • Basil leaves, to serve
Instructions:
  • Boil the pasta in a large saucepan as per package instructions. Save 1/2 cup (125ml) of the cooking liquid before draining.
  • Heat oil in a large deep frying pan over medium-high heat. Add cauliflower and cook, turning occasionally, until golden, about 6 minutes. Stir in garlic and chili and cook for 1 minute until garlic starts to brown.
  • Combine the cooked pasta with the reserved liquid, peas, and half of the Parmesan cheese. Cook for 2 minutes or until peas are tender. Serve with a garnish of fresh basil and the remaining Parmesan cheese on top.
