Delicious cauliflower rice fajita bowl with roasted bell pepper, onion, pinto beans, and fresh cilantro - a flavorful, vegetarian delight!
Ingredients:
  • 2 pounds riced cauliflower
  • 1 red bell pepper, sliced, or more to taste
  • 1 small red onion, halved and sliced
  • 0.25 cup extra-virgin olive oil
  • 4 cloves garlic, grated
  • 1.5 tablespoons fajita seasoning
  • 2 teaspoons ground cumin
  • 1.5 teaspoons kosher salt
  • 1 (15.5 ounce) can pinto beans, rinsed and drained
  • 4 ounces crumbled cotija cheese
  • 0.5 cup chopped fresh cilantro
  • 0.5 cup pepitas (pumpkin seeds)
  • 2 green onions, thinly sliced
  • 1 lime, juiced
Instructions:
  • Preheat the oven to 425 degrees F (220 degrees C) while lining a baking sheet with aluminum foil, making sure to extend the foil up the sides to trap all the delicious juices.
  • In a large bowl, toss cauliflower, red bell pepper, red onion, olive oil, garlic, fajita seasoning, cumin, and salt until well coated. Spread the veggies onto the baking sheet.
  • Roast in the preheated oven for 15 minutes, then stir and roast until tender and lightly browned, about 15 minutes longer.
  • Lavish with pinto beans, crumbly cotija cheese, fresh cilantro, crispy pepitas, vibrant green onions, and a generous squeeze of zesty lime juice. Serve the delightful mixture in 4 beautiful bowls.
