Elevate cauliflower with crispy bacon, toasted pine nuts, and garlic for a flavorful dish.
Ingredients:
  • 1 cauliflower head, cut into florets (see How to Cut and Core Cauliflower )
  • 1/4 cup pine nuts
  • 1/4 pound bacon or pancetta, cut into batons
  • 4 to 5 garlic cloves, sliced thin
  • 1 to 2 teaspoons dried oregano
  • 1 to 2 teaspoons red pepper flakes
  • Kosher salt and freshly ground black pepper to taste
  • Lemon juice, to taste
Instructions:
  • Cook the cauliflower in a pot of boiling salted water for 5 minutes. Drain and set aside.
  • Toast the pine nuts in a dry sauté pan over medium heat until lightly browned, being careful not to burn them. Remove from heat once toasted.
  • Crisp up the bacon: Cook the bacon in a pan over medium heat until it's nice and crispy. Set aside with the pine nuts.
  • Sauté garlic in a pan over medium-high heat for 1 minute, then add cauliflower, pine nuts, bacon, oregano, and red pepper flakes. Stir frequently and sauté for 3 to 4 minutes until combined. Be careful not to burn the garlic.
  • Turn off the heat and elevate the flavors by generously seasoning with salt and refreshing lemon juice to your liking.
