Indulge in a cheesy cauliflower and broccoli blend topped with pine nuts for a delightful side dish.
Ingredients:
  • 7 cups fresh cauliflower florets
  • 5 cups fresh broccoli florets
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground pepper
  • 2 tablespoons butter or margarine
  • 2 tablespoons Gold Medal™ all-purpose flour
  • 1 cup milk
  • 3/4 cup shredded sharp white Cheddar cheese (3 oz)
  • 1/4 cup pine nuts, toasted
Instructions:
  • Preheat oven to 425°F. Combine cauliflower and broccoli in a large roasting pan with oil, salt, and pepper. Roast for 25 minutes, stirring occasionally, until vegetables are golden brown and tender.
  • In a small saucepan, melt butter over medium-low heat. Whisk in flour and cook until smooth and bubbly. Slowly pour in milk, stirring constantly until it boils and thickens. Add cheese and stir until melted.
  • Transfer the beautifully roasted vegetables into serving dishes. Drizzle the rich cheese sauce generously over the vegetables and top with a sprinkle of crunchy pine nuts.
