Cheesy broccoli and cauliflower bake with a spicy kick from cayenne pepper and mustard.
Ingredients:
  • 6 ounces fresh cauliflower
  • 6 ounces fresh broccoli
  • 2 tablespoons butter
  • 2.5 tablespoons all-purpose flour
  • 2.5 cups milk
  • 1 teaspoon English mustard
  • cayenne pepper to taste
  • salt and pepper to taste
  • 1 (8 ounce) package shredded sharp Cheddar cheese, divided
Instructions:
  • Heat your oven to 425°F (220°C).
  • In a medium saucepan, combine cauliflower and broccoli and cover with water. Bring to a boil and cook until tender, approximately 10 minutes. Drain and transfer to a medium baking dish.
  • Melt butter in a medium saucepan over low heat. Add flour and stir to form a thick paste. Slowly whisk in milk until mixture thickens, about 5 minutes. Stir in mustard, cayenne pepper, salt, and pepper. Add 2/3 of the cheese, stir until melted.
  • Cover the broccoli and cauliflower with sauce, bake until bubbly and lightly browned (about 30 minutes), and sprinkle with the remaining cheese during the last 10 minutes of cooking.
