Causa croquettes

Party-perfect deep-fried Peruvian croquettes.
Ingredients:
  • extra virgin olive oil
  • 750 g potatoes
  • 1 large knob of unsalted butter
  • 1 red onion
  • 1 lime
  • 200 g small cooked prawns from sustainable sources
  • 100 g white crabmeat from sustainable sources
  • 1-2 teaspoons aji amarillo paste or piri piri sauce
  • 100 g plain flour
  • 2 large free-range eggs
  • 100 g breadcrumbs
  • 1 litre vegetable oil
  • 2 ripe avocados
  • 2 limes
  • 1 ripe tomato
  • 1 bunch of fresh coriander (30g)
Instructions:
  • Peel and dice the potatoes evenly, then cook in a large pot of salted water until tender. Drain, let them dry out a bit, and mash until smooth. Season and add butter. For the guacamole-style dressing, mix avocados with salt, pepper, lime juice, grated onion, tomato, coriander, and olive oil. In a separate bowl, marinate finely chopped onion with lime zest and juice. Combine chopped prawns and crabmeat with aji amarillo paste, and mix in the onions. Prepare a dredging station with flour, beaten eggs, and breadcrumbs. Form croquettes by shaping mashed potato balls, pressing a hole, filling with seafood mix, and sealing. Coat each croquette in flour, egg, and breadcrumbs. Fry in oil until golden and crispy. Drain and serve with guacamole on the side.
