Creamy celery root puree with butter and a hint of lemon makes a delightful mashed potato alternative.
Ingredients:
  • 1 large celery root, peeled and cut into chunks
  • 1 lemon, juiced, divided
  • kosher salt to taste
  • 0.33333334326744 cup heavy whipping cream
  • 2 tablespoons butter
  • 1 pinch cayenne pepper, or to taste
Instructions:
  • In a large pot, combine celery root, half of the lemon juice, and kosher salt. Cover with water and bring to a boil. Simmer gently until tender, about 15-20 minutes. Drain well.
  • Make a velvety puree by blending celery root, cream, and butter until smooth. Strain the mixture through a fine-mesh sieve into a bowl to ensure a silky texture. Stir in lemon juice, salt, and cayenne pepper to add flavor.
