Satisfying celery root mash, a scrumptious low-carb twist on classic mashed potatoes. Perfect pairing with chicken, steak, or lamb for a delightful dinner.
Ingredients:
  • 2 pounds celery root
  • 1/2 cup milk or cream
  • 3 tablespoons unsalted butter
  • Salt to taste
  • Chopped celery root leaves, for garnish (optional)
Instructions:
  • Bring a large pot of salted water to a vigorous boil, using 1 tablespoon of salt for every 2 quarts of water.
  • Peel and cube the celery root: Peel the celery root with a knife and cut it into 1-inch cubes while the water heats up.
  • Cook the cubed celery root in boiling water for 25-30 minutes until tender.
  • After draining the celery root, steam it in the pot on low heat, covered, for a minute or two. Remember to shake the pan occasionally to prevent sticking.
  • Combine milk or cream, butter, and a generous pinch of salt with the celery root. Mash the mixture with a potato masher until desired smoothness. Season with salt to taste and garnish with celery root leaves, if desired.
