Chai Hot Chocolate with Cinnamon Cream

Prepare ahead: Whip and chill cream.
Ingredients:
  • 1 cup water
  • 3 tea bags chai black tea
  • 1/4 cup caramel topping
  • 3 tablespoons sugar
  • 3 cups milk or coconut milk
  • 1/2 teaspoon vanilla
  • 1 cup whipping cream
  • Candy sprinkles, if desired
Instructions:
  • In a 2-quart saucepan, bring water to a gentle boil. Steep tea bags in the hot water off the heat for 10 minutes, then remove and discard the tea bags.
  • Combine cocoa, caramel topping, and 2 tablespoons of sugar with tea in a pot. Bring to a boil over medium heat, stirring constantly. Let it boil for 1 minute. Stir in milk and heat until hot, being careful not to boil. Remove from heat and add vanilla. Keep warm by covering the pot.
  • Whip whipping cream, cinnamon, and 1 tablespoon sugar in a chilled medium bowl with an electric mixer on high speed until stiff peaks form.
  • Pour the hot chocolate into mugs, add dollops of whipped cream, and decorate with sprinkles. Save any leftover whipped cream for later use.
