Indian-inspired spiced dessert twist.
Ingredients:
  • 3 cardamom pods, bruised
  • 2cm piece ginger, peeled, grated
  • 2 chai and vanilla tea bags
  • 125.00 gm boiling water
  • 1 litre buttermilk
  • 161.25 gm caster sugar
  • 0.63 gm ground cinnamon
  • 1/2 tsp vanilla bean paste
  • 12.00 gm powdered gelatine
  • 62.50 ml chopped pistachio kernels
  • 20.00 ml orange zest
Instructions:
  • In a heatproof jug, combine cardamom, ginger, and tea bags. Pour in 1/3 cup of boiling water and let it steep for 30 minutes to enhance the flavors. Strain the mixture into a bowl, removing the cardamom, ginger, and tea bags.
  • In a saucepan over low heat, combine buttermilk, sugar, cinnamon, vanilla, and tea mixture. Cook while stirring for 3 to 4 minutes until sugar dissolves and buttermilk is warmed through. Remove from heat.
  • Pour the rest of the boiling water into a heatproof bowl. Sprinkle the gelatin over it and whisk until dissolved. Combine the gelatin mixture with the buttermilk mixture, stirring constantly. Pour the mixture into eight 200ml-capacity glasses and refrigerate for 4 hours until set.
  • Distribute pistachios and orange rind evenly among the glasses. Ready to enjoy!
