Chai-infused pears with zesty orange sauce and crunchy granola - a versatile and elegant treat for any occasion!
Ingredients:
  • 0.5 cup brown sugar
  • 3 tablespoons honey
  • 1 orange, zested and juiced
  • 3 whole cloves
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 1 pinch chili flakes
  • 1 pinch salt
  • 1 cup walnuts, divided
  • 0.75 cup pecans, divided
  • 1.5 teaspoons ground cinnamon
  • 2 tablespoons coconut oil
  • 2 cups rolled oats
  • 0.5 cup honey
  • 2 teaspoons vanilla extract
  • 8 cups water
  • 8 chai tea bags
  • 0.25 cup brown sugar
  • 8 large Bosc pears - peeled, halved and cored
  • 8 cups coconut yogurt
  • 1 tablespoon orange zest, or to taste
Instructions:
  • Combine 1/2 cup brown sugar, honey, juice and zest of 1 orange, cloves, cinnamon, nutmeg, chili flakes, and salt in a small saucepan over medium heat to make the sauce. Bring to a boil, then simmer gently for 5 minutes. Remove from heat and let cool for 10 minutes before using.
  • In a food processor, pulse together 3/4 cup walnuts, 3/4 cup pecans, 1/2 cup brown sugar, 1 1/2 teaspoons cinnamon, and a pinch of salt until finely ground, around 15 to 20 seconds.
  • Preheat a skillet over medium-high heat and melt coconut oil. Chop the remaining 1/4 cup of walnuts and pecans. Add the chopped nuts and oats to the hot oil and toast for 1 minute, stirring frequently. Add the ground nut mixture and mix well. Toast until the sugar starts to melt, for about 2 to 3 minutes. Stir in honey and vanilla extract. Remove from heat and let it cool in the skillet, stirring a few times as it cools.
  • 1. Boil water in a large pot, steep tea bags off the heat with a lid on for 8 minutes. Discard tea bags. Stir in 1/4 cup brown sugar into chai.
  • Bring the tea and water to a boil over high heat. Add pears and simmer over low heat for 15 minutes. Gently rotate the pears with a spoon. Simmer for another 15 minutes. For a stronger spice flavor, let the pears soak in the chai off the heat for an additional 10 to 15 minutes.
  • Spoon coconut yogurt into pear cavity, sprinkle with granola, drizzle with orange sauce, and finish with orange zest garnish.
