Indulgent poached pears: A stunning winter dessert perfect for entertaining. Can be refrigerated in poaching liquid for 3 days, also great for breakfast.
Ingredients:
  • 4 pears
  • 225.00 gm sugar
  • 1 bottle champagne
  • 500.00 gm water
  • 1 cinnamon stick, halved
  • 1 lemon, zested
  • 1 orange, zested cream or ice-cream to serve
Instructions:
  • Carefully peel the pears, ensuring the stems remain attached if feasible. Drizzle a touch of lemon juice over the pears to prevent discoloration.
  • In a large saucepan over medium heat, combine sugar, champagne, water, cinnamon, lemon, and orange zest. Stir until sugar is completely dissolved, then increase heat and bring mixture to a boil.
  • After the poaching liquid reaches a boil, lower the heat, gently place the pears in the liquid, and cover them entirely with a sheet of baking paper. Simmer for 20 minutes or until the pears are tender.
  • Once cooled, enjoy with a dollop of cream or a scoop of ice-cream, and a drizzle of the poaching liquid.
