Champagne risotto

Luxurious risotto infused with the elegance of champagne.
Ingredients:
  • 60.00 gm unsalted butter
  • 40ml (2 tbsp) olive oil
  • 1 onion, very finely chopped
  • 625ml (2 1/2 cups) chicken style liquid stock
  • 330g (1 1/2 cups) arborio rice
  • 625ml (2 1/2 cups) dry Champagne or sparkling wine
  • 125.00 ml grated parmesan
Instructions:
  • In a frying pan over medium heat, melt 1 tablespoon of butter with oil. Add the onion and sauté for 1-2 minutes until softened, stirring occasionally.
  • Warm the chicken stock in a saucepan over gentle heat.
  • Pour the rice into the frying pan and stir to evenly coat. Gradually pour in the stock, 1/2 cup at a time, stirring gently until fully absorbed. Follow by adding the Champagne in 1/2 cup increments, stirring until cooked. Mix in the remaining butter and parmesan, cover, and let sit for 5 minutes. Serve in small bowls or cups alongside a glass of Champagne.
