Champagne Sorbet

Indulgent champagne sorbet, a sparkling treat for any celebration.
Ingredients:
  • 1 1/2 cups sparkling wine or champagne
  • 1 cup white granulated sugar
  • 1 tablespoon light corn syrup
  • 1 teaspoon lemon and/or grapefruit zest
  • 1 1/2 cups fresh grapefruit juice
  • 1/4 cup fresh squeezed lemon juice (Meyer if you have access to them)
Instructions:
  • Combine champagne, sugar, corn syrup, and zest in a saucepan. Bring to a rolling boil until sugar dissolves completely. Remove from heat.
  • Strain into a stainless steel bowl to speed up cooling, then mix in the grapefruit juice and lemon juice.
  • Chill until completely cold. You can either place the bowl in a larger bowl filled with ice water and stir until cold, refreshing the ice as needed, or cover the bowl with plastic wrap and refrigerate overnight. Alternatively, you can speed up the chilling process by placing the bowl in the freezer for a couple of hours, ensuring it's not touching any other food.
  • Churn mixture in your ice cream maker according to manufacturer's instructions.
