Grilled lamb chops paired with a flavorful onion and parmesan salad - the perfect family dinner.
Ingredients:
  • 8 (about 800g) lamb loin chops
  • 80mls (1/3 cup) balsamic vinegar
  • 60mls (1/4 cup) olive oil
  • 20.00 ml finely chopped fresh mint
  • 2 medium red onions, peeled, thickly sliced
  • 1 green coral leaf lettuce, leaves trimmed
  • 1/2 bunch rocket (40g loose), trimmed
  • 25g (1/4 cup) shredded Parmesan
  • Salt & ground black pepper, to taste
Instructions:
  • Place the lamb chops in a spacious glass or ceramic dish. Mix balsamic vinegar, 2 tablespoons of olive oil, and mint in a screw-top jar, then shake vigorously. Pour the marinade over the lamb, ensuring all chops are coated. Let it sit for 10 minutes.
  • Preheat barbecue grill or chargrill to medium heat. Brush onions with 1 tablespoon olive oil and grill for 6-8 minutes until slightly crisp and golden, flipping once. Set aside to cool. Grill chops for 4-5 minutes on each side, brushing with marinade as needed, until cooked to your preference.
  • In a bowl, mix onions, lettuce, rocket, Parmesan, salt, and pepper thoroughly. Serve the lamb chops with the grilled onion salad.
