Chargrilled treviso with balsamic and pine nuts

Treviso and balsamic vinegar create a perfect balance of flavors - bitter meets sweet and peppery.
Ingredients:
  • 4 treviso lettuce, trimmed, bases intact, quartered lengthways
  • 60ml (1/4 cup) olive oil
  • 20.00 ml balsamic vinegar
  • 40.00 ml pine nuts, lightly toasted
Instructions:
  • Preheat a barbecue grill or chargrill on high heat. Drizzle the treviso with 2 tablespoons of oil, then season with salt and pepper. Grill half of the treviso for 2 minutes per side until lightly charred. Transfer to a serving platter and repeat with the remaining treviso.
  • In a bowl, combine the balsamic and remaining oil by whisking. Drizzle the treviso with the dressing and sprinkle with pine nuts.
