Grilled baby octopus with zesty marinade, a taste of Australia's bountiful seafood.
Ingredients:
  • 18 (about 250g) cleaned baby octopus
  • 60ml (1/4 cup) dry white wine
  • 9.20 gm extra virgin olive oil
  • 2 large garlic cloves, crushed
  • 2.50 gm ground mild paprika
  • 1 small fresh red chilli, finely chopped
  • Freshly ground black pepper
  • Pinch of salt
Instructions:
  • Rinse the octopus well under cool running water, then dry it off with paper towels.
  • In a glass or ceramic bowl, mix together white wine, oil, garlic, paprika, and chili. Season with pepper and thoroughly combine. Add octopus and toss to coat. Cover with plastic wrap and refrigerate for 30 minutes to marinate.
  • Preheat a sizzling chargrill or barbecue grill until it's nice and hot. Drain the octopus and transfer the marinade to a small saucepan. Grill the octopus on the hot chargrill or barbecue, turning occasionally, until they curl up and are perfectly cooked, about 4-5 minutes.
  • Add a touch of salt to enhance the flavors of the marinade and bring it to a boil over medium-high heat. Simmer uncovered for 1 minute.
  • Arranged the octopus in a serving dish and generously drizzle with the flavorful marinade. Serve piping hot alongside fresh lemon wedges.
