Chargrilled salmon with bean and parsley salad

Quick and flavorful char-grilled salmon with bean salad ready in under 20 minutes.
Ingredients:
  • 400g green beans, topped
  • 1/2 red onion, thinly sliced
  • 21.00 gm fresh lemon juice
  • 20.00 ml chopped fresh continental parsley
  • 2.95 gm wholegrain mustard
  • 60ml (1/4 cup) olive oil
  • 4 (about 150g each) salmon fillets
Instructions:
  • Boil the beans in a saucepan for 3 minutes until they are bright green and tender crisp. Drain and cool them under cold running water. Preheat the chargrill on medium-high heat.
  • In a medium bowl, combine beans, onion, lemon juice, parsley, mustard, and 1 tablespoon of oil. Season with salt and pepper, then gently toss to mix.
  • Coat the salmon fillets evenly with the reserved oil and generously season with salt and pepper. Grill on high heat for 1-2 minutes on each side for a perfect medium cook or until desired doneness is achieved.
  • Portion the bean salad onto individual serving plates, then elegantly place a generous portion of succulent salmon on top. Serve promptly to enjoy the fresh flavors at their peak.
