Chargrilled tomato salad with garam masala dressing

Vibrant vegan tomato salad for a flavorful meal.
Ingredients:
  • 2 x 220g punnets grape tomatoes, halved lengthways
  • 63.70 gm extra virgin olive oil
  • 1 x 150g pkt baby spinach leaves
  • 1 bunch fresh basil, leaves picked
  • 42.00 gm fresh lemon juice
  • 5.00 gm caster sugar
  • 1/2 tsp garam masala
Instructions:
  • Preheat the barbecue or chargrill until it's sizzling hot. Place tomato in a bowl and generously drizzle with 2 teaspoons of oil. Sprinkle with salt and pepper, then mix well. Grill half the tomatoes for about 2 minutes on each side until beautifully charred and tender. Transfer to a large heatproof bowl. Repeat with the rest of the tomatoes.
  • In a large bowl, mix together the spinach, basil, and tomato, ensuring they are well combined.
  • In a screw-top jar, shake together the remaining oil, lemon juice, sugar, and garam masala until fully combined.
  • Drizzle dressing over salad and toss gently to combine. Serve promptly.
