Elevate homemade pizzas with a variety of fresh veggies for a gourmet twist.
Ingredients:
  • 2 bought 30cm pizza bases
  • 140g pizza sauce
  • 80g (3/4 cup) shredded light mozzarella
  • 1 270g jar chargrilled capsicum
  • 200g chargrilled orange sweet potato (kumara) slices
  • 120g button mushrooms, thinly sliced
  • 1 400g can artichoke hearts, drained well, quartered
  • 1 small brown onion, halved thinly sliced
  • 20.00 ml chopped fresh oregano
  • 2 garlic cloves, finely chopped
  • Salt & ground black pepper
Instructions:
  • Preheat your oven to a toasty 220°C.
  • Lay out the pizza bases on 2 large pizza or baking trays. Evenly distribute the pizza sauce on the bases and top each with 1/4 of the mozzarella cheese.
  • Pat dry the capsicum and sweet potato slices using paper towels to absorb excess oil. Arrange the sweet potato slices evenly on the pizza bases, then layer with capsicum, mushrooms, artichokes, and onion.
  • Combine the remaining mozzarella with oregano, garlic, salt, and pepper in a small bowl. Spread the mixture evenly over the pizzas.
  • Bake the pizzas in a preheated oven, switching trays halfway through, until golden brown, about 20 minutes. Slice into wedges and enjoy!
