Family-friendly chicken drumsticks, easy and flavorful.
Ingredients:
  • 8 (125g each) chicken drumsticks
  • 1/2 quantity Basil pesto (see related recipe)
  • 4 slices prosciutto, halved lengthways
  • 2 medium zucchini, thickly sliced diagonally
  • 1 small red capsicum, thickly sliced
  • 1 small yellow capsicum, thickly sliced
  • 1 medium red onion, cut into thin wedges
  • 1 garlic clove, crushed
  • 100g baby spinach
  • 40.00 ml balsamic vinegar
Instructions:
  • Gently create a pocket under the skin of each drumstick. Fill each pocket with 1 teaspoon of pesto and wrap each drumstick with a piece of prosciutto.
  • Preheat a greased barbecue plate and chargrill on medium heat. Grill chicken with the hood closed, turning occasionally, for 10 to 12 minutes until fully cooked.
  • In a large bowl, mix zucchini, capsicum, onion, oil, and garlic until evenly coated. Grill the vegetables on a barbecue chargrill, turning occasionally, until browned and tender, for about 4 to 5 minutes.
  • Combine grilled vegetables in a large bowl with spinach and balsamic, season to taste, gently toss to mix. Serve alongside chicken and roasted vegetable salad drizzled with the remaining pesto.
