Mouthwatering Mediterranean-style grilled veggies on fluffy pita - simple and delicious!
Ingredients:
  • 1 large eggplant, sliced
  • 4 medium zucchini, sliced
  • 12 button mushrooms, sliced
  • 1 red capsicum, quartered
  • 4 80g wholemeal pita breads
  • 125.00 ml tomato pizza sauce
  • 250.00 ml Original Cottage Cheese
  • Basil leaves, to serve
Instructions:
  • Grill eggplant, zucchini, mushrooms, and red capsicum until tender, then peel and slice the capsicum.
  • Spread a layer of flavorful tomato sauce onto the pita breads, generously top them with fresh and colorful vegetables, and finish by evenly dolloping creamy cottage cheese on top.
  • Preheat oven to 200°C and bake until crust is crispy and cheese is golden brown. Garnish with fresh basil leaves before serving.
