Creamy polenta topped with char-grilled vegetables for a sensational side dish.
Ingredients:
  • 2 eggplants, thinly sliced lengthways
  • 2 green capsicums, cut into strips
  • 2 red capsicums, cut into strips
  • 3 zucchini, thinly sliced lengthways
  • olive oil cooking spray
  • 150.00 gm instant polenta (see note)
  • 40g butter
  • 2.40 gm salt
  • 62.50 ml grated parmesan cheese
  • 87.45 gm herb and garlic salad dressing
Instructions:
  • Heat up a chargrill or barbecue plate on medium-high heat. Coat vegetables with oil and season with salt and pepper. Cook vegetables in batches until they are lightly charred and tender.
  • Prepare polenta according to the package instructions. Once cooked, remove from heat and gently incorporate butter, salt, and parmesan for a rich and savory finish.
  • Serve up a generous spoonful of polenta on each plate, then layer on the tasty vegetables and finish with a drizzle of delicious dressing.
