Chargrilled zucchini, marinated feta & spring pea bruschetta

Savor the burst of flavors in this appetizing chargrilled zucchini bruschetta.
Ingredients:
  • Zest and juice of 1 lemon, plus extra zest to serve
  • 2 zucchinis, thinly sliced lengthways (a mandoline is ideal)
  • 36.40 gm olive oil
  • 1/2 crusty baguette, cut into 12 slices
  • 1 garlic clove, halved
  • 250g feta, drained
  • 125.00 ml mint leaves, finely chopped, plus extra to serve
  • 8 slices prosciutto, torn
  • 125.00 ml fresh baby peas or frozen baby peas, blanched, refreshed
Instructions:
  • In a bowl, mix together fresh lemon juice, sliced zucchini, and 1 tablespoon of oil. Season the mixture and let it marinate for 15 minutes.
  • Preheat a chargrill pan over medium-high heat. Brush bread slices with 1 tablespoon of oil. Grill for 1-2 minutes on each side until golden and charred. Rub the cut side of the garlic on the bread. Set aside.
  • Chargrill the zucchini in 2 batches for about 1 minute on each side until tender and lightly charred, saving the marinade for later.
  • Combine feta, lemon zest, and mint with the reserved marinade, season generously, and mix until smooth.
  • Spread the delicious feta mixture on the baguette slices, then layer with prosciutto, zucchini, peas, and extra zest and mint for an extra pop of flavor.
