Smashed peas with chargrilled zucchini and lemon

Ingredients:
  • 1 zucchini, thinly sliced lengthways
  • 250g frozen peas
  • 18.20 gm extra virgin olive oil, plus extra to serve
  • 1 lemon, rind finely grated, juiced
  • Small mint leaves, to serve
Instructions:
  • Preheat a chargrill or barbecue to medium heat. Spray zucchini slices with olive oil and grill for 2-3 minutes on each side until charred and tender. Transfer to a plate to keep warm.
  • Cook peas in boiling water for 2 minutes. Drain, lightly mash with olive oil, 1 tablespoon of lemon juice, and season to taste.
  • Place the peas and zucchini on a plate, then garnish with lemon rind strips and fresh mint leaves. Finish by drizzling with a generous amount of oil before serving.
