Butter-smashed green peas paired with sauteed radishes for a simple and delicious side dish.
Ingredients:
  • 12 ounces frozen green peas
  • 1 tablespoon butter
  • 1 cup thinly sliced radishes
  • 1 tablespoon chopped fresh mint
  • 1 teaspoon grated Parmesan cheese, or to taste
Instructions:
  • Bring salted water to a vigorous boil in a saucepan. Add peas and cook until tender, for about 5 minutes. Drain peas and set aside.
  • Lower the heat to medium and introduce the butter into the saucepan. Mix in the radishes, and cook while stirring frequently until they turn translucent, which should take about 3 minutes.
  • Plate the radishes and bring the drained peas back to the pan. Lightly mash the peas with a potato masher to your preferred consistency. Mix in the radishes and mint. Season with Parmesan cheese, salt, and black pepper to your liking.
