Roast butter chicken and smashed potatoes recipe

Butter chicken roast chicken with crispy smashed potatoes - a quick and flavor-packed twist on a classic favorite. Perfect for weeknight dinners!
Ingredients:
  • 700g baby coliban (chat) potatoes
  • 1.5kg whole chicken, trussed
  • 180g packet Recipe Base Butter Chicken
  • 1 large red onion, cut into thick wedges
  • 1 Lebanese cucumber, peeled into ribbons
  • Fresh mint leaves, to serve
  • Greek-style yoghurt, to serve
Instructions:
  • In a large saucepan, cover the potatoes with plenty of cold water. Bring to a boil over high heat and cook for 10-15 minutes until tender when pierced with a skewer. Drain and let them cool slightly before using.
  • Place the chicken in a 2.5cm deep baking tray and generously pour the recipe base over the chicken to ensure it is completely covered.
  • Preheat the oven to 180C/160C fan forced. Gently press each potato with a spoon to create a slight flattening. Place the potatoes on the tray around the chicken. Spray the potatoes with oil and season. Roast everything for 30 minutes.
  • Place the onion on the tray and continue roasting for 1 hour, or until the chicken is cooked through and the potatoes are golden brown.
  • Place fresh cucumber slices and fragrant mint leaves elegantly on a serving tray. Add dollops of creamy yogurt on top, season with your favorite spices, and present it beautifully for a delightful serving.
