Delicious and simple healthy egg breakfast.
Ingredients:
  • 1 red pepper
  • 4 spring onions
  • ½ a ripe avocado
  • 1 sweet potato
  • 2 large free-range eggs
  • 2 tablespoons cottage cheese
  • ½ a fresh red chilli
  • a few sprigs of fresh soft herbs, such as parsley, mint, coriander
Instructions:
  • Cut and remove the seeds from the pepper, then slice thinly. Thinly slice the spring onions, then remove the pit, peel, and dice the avocado. In a medium frying pan over medium-high heat, warm 1 tablespoon of oil. Cook the spring onions, avocado, and pepper for 3 to 4 minutes until slightly charred. Peel the sweet potato and continue shaving it into thin ribbons. Add the sweet potato to the pan and cook for 3 minutes until charred. Create two wells in the pan, crack an egg into each, and swirl the whites into the veggies. Season with salt and pepper, cover, and cook on medium-low until the eggs reach your desired consistency, around 3 to 5 minutes. Finely chop the chili and roughly chop the herbs. Plate the dish, top with cottage cheese, sprinkle with chili and herbs, and enjoy!
