Elevate your greens with flavorful compound butter and crunchy nuts for a gourmet twist.
Ingredients:
  • 200g green beans, trimmed
  • 2 bunches asparagus, trimmed
  • 1 bunch broccolini, trimmed
  • 50g butter, softened
  • 20.00 ml finely grated parmesan
  • 1 tsp caraway seeds, toasted, lightly crushed
  • 1 tsp finely grated lemon rind
  • 1 garlic clove, crushed
  • 40.00 ml natural sliced almonds, toasted
  • Fresh flat-leaf parsley leaves, to serve
  • Chargrilled baguette, to serve (optional)
Instructions:
  • Blanch beans, asparagus, and broccolini in a pot of boiling salted water for 2 minutes until vibrant and slightly al dente. Drain thoroughly.
  • In a small bowl, mix together butter, parmesan, caraway seeds, lemon zest, and garlic. Season with salt and pepper to taste.
  • Preheat a large frying pan over high heat. Pat greens dry with paper towel and add to the pan. Cook for 1 to 2 minutes, tossing occasionally, until lightly charred. Add the butter mixture and toss to coat. Transfer to a serving plate, sprinkle with almonds and parsley, and serve.
