Savor the flavor of blistered shishito peppers, kissed with tangy lemon for a simple and delightful starter.
Ingredients:
  • 8 ounces shishito peppers
  • 2 tablespoons avocado oil
  • 0.5 lemon
  • coarse sea salt to taste
Instructions:
  • Wash shishito peppers and pat them dry to remove all moisture. Use a sharp knife to make small slits in the peppers to avoid steam buildup while cooking. Coat the peppers with oil in a large bowl.
  • Heat up a cast iron skillet until it's nice and hot over medium-high heat. Arrange the peppers in a single layer in the skillet, cooking in batches if needed to avoid overcrowding.
  • Allow the peppers to cook undisturbed for 2 minutes. The peppers may sizzle and pop. Flip the peppers and cook for an additional 2 minutes. Turn off the heat, drizzle with lemon juice, and sprinkle with coarse sea salt.
