Delicious stew with chayote squash, Italian sausage, and jalapeno peppers.
Ingredients:
  • 2 Italian sausage links
  • 1 tablespoon extra-virgin olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 3 chayote squashes, seeded and chopped
  • 2 jalapeno peppers, seeded and diced
  • 1 (15 ounce) can diced tomatoes
  • 1 cup frozen corn
  • 0.5 teaspoon ground thyme
  • 1 teaspoon chili powder
  • salt and pepper to taste
Instructions:
  • Heat a large saucepan over medium-high heat, brown the sausage, then set aside on a paper towel-lined plate. In the same pan, sauté onion and garlic in olive oil until translucent, about 3-5 minutes. Add back the sausage, chayote squash, and jalapeno; cook until squash softens, about 10-15 minutes. Stir in tomatoes, black beans, corn, thyme, and chili powder; season with salt and pepper. Cook for an additional 10 minutes until heated through.
