Upgrade classic beef and ale pies with a crispy potato topping.
Ingredients:
  • 1/2 x 800g pkt Roast Potatoes (Rosemary and Garlic)
  • 1 brown onion, finely chopped
  • 1 large carrot, finely chopped
  • 3 garlic cloves, finely chopped
  • 20.00 ml chopped thyme leaves, plus extra sprigs to serve
  • 500g beef mince
  • 330ml ale
  • 44.40 gm tomato paste
  • 5.00 gm cornflour
  • 250.00 ml grated tasty cheese
Instructions:
  • Preheat your oven to 220C (200C fan-forced) and place a baking tray inside to heat up.
  • Arrange the potatoes on the preheated tray and bake for 30 minutes until easily breakable.
  • In a large frying pan over medium-high heat, heat oil. Sauté onion, carrot, garlic, and thyme for 5 minutes until softened. Increase heat to high, then add beef mince. Cook for 3 minutes, breaking up lumps with a wooden spoon until browned. In a jug, combine ale, tomato paste, and cornflour. Pour mixture into the pan with the beef. Bring to a boil and simmer for 5 minutes until the sauce thickens. Season to taste.
  • Get the grill sizzling hot.
  • Fill four 1 1/2 cup ovenproof ramekins with the beef mixture. Top each with potato and sprinkle cheese over each. Place on a clean baking tray and grill for 3-4 minutes or until cheese is golden. Serve with extra thyme sprigs.
