Cheat's cottage pie with waffle chips

Upgrade the classic family favorite recipe with a modern twist using Cross Trax chips from the supermarket.
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 1 brown onion, chopped
  • 2 x 400g cans lentils, rinsed, drained
  • 2 x Mutti Polpa Finely Chopped Tomatoes 400g
  • 140g (1/2 cup) tomato paste
  • 20.00 ml finely chopped fresh thyme leaves, plus extra sprigs, to serve (optional)
  • 5.00 gm smoked paprika
  • 2 Vegetable Stock Cubes, crumbled
  • 150g (3 cups) frozen mixed vegetables
  • 500g pkt frozen Sweet Potato Cross Trax chips
Instructions:
  • Preheat the oven to 200°C/180°C fan forced. In a flameproof casserole dish over high heat, sauté the onion in oil for 2 minutes until softened. Add lentils, tomatoes, tomato paste, garlic, thyme, paprika, and stock cubes. Season and cook for 1 minute, stirring constantly.
  • Combine the frozen vegetables with 125ml (1 ⁄2 cup) water in the pot. Cook and stir frequently for 5 minutes.
  • Smooth the top layer and layer sweet potato chips on top. Bake for 35-40 minutes or until chips are crispy. Sprinkle with extra thyme, if desired.
