Prepare a delicious pasta bake in 30 minutes with quick-cooking risoni pasta and easy microwave bechamel sauce.
Ingredients:
  • 500.00 ml dried risoni
  • 18.20 gm extra virgin olive oil
  • 1 brown onion, chopped
  • 3 middle bacon rashers, trimmed, chopped
  • 800g beef mince
  • 2 garlic cloves, crushed
  • 3 sprigs fresh rosemary
  • 3 sprigs fresh oregano
  • 82.50 gm dry white wine
  • 2 x 410g cans tomatoes (with basil and garlic)
  • 250.00 ml fresh basil leaves
  • 375.00 ml grated tasty cheese
  • Extra basil leaves, to serve
  • 50g butter, chopped
  • 82.50 ml plain flour
  • 772.50 gm milk
Instructions:
  • Prepare the risoni in a large saucepan of boiling salted water according to the package instructions until it reaches a tender consistency. Be sure to drain thoroughly.
  • Heat oil in a large deep frying pan. Add onion and bacon, cook for 3 minutes until browned and tender. Add mince, cook for 3 minutes until browned. Add garlic, herb sprigs, and wine, simmer for 1 minute. Stir in tomatoes, simmer for 15 minutes. Remove and discard herbs.
  • While you prepare the béchamel sauce in the microwave, start by placing butter in a large microwave-safe bowl and melting it for 1 minute on HIGH (100%). Then, whisk in flour and microwave for another 30 seconds to 1 minute until bubbling. Gradually stir in 1 cup of milk until smooth, then add the remaining milk. Microwave on MEDIUM-HIGH (75%) for 3 to 4 minutes, whisking every minute until the sauce thickens. Finally, season it with salt and pepper and set it aside.
  • Preheat the grill to high. Spoon risoni into an 8-cup flameproof baking dish, spread evenly. Top with mince mixture, spread evenly. Arrange basil in a single layer over mince. Pour over béchamel and sprinkle with cheese. Grill for 2 minutes until cheese is melted and golden. Serve with extra basil on top.
