Cheat's peanut butter baklava

Easy cheat's Turkish baklava: layer crunchy peanut butter and Nutella between filo pastry.
Ingredients:
  • 125.00 ml skinless hazelnuts
  • 75.90 gm walnuts
  • 165.00 ml pecans
  • 15 sheets filo pastry
  • 100g butter, melted
  • 171.60 gm crunchy peanut butter
  • 198.00 gm Nutella
  • 82.50 ml white chocolate chips
  • Icing sugar, for dusting
Instructions:
  • Preheat your oven to 190C (170C fan-forced) and grease a 20cm x 30cm lamington pan.
  • Pulse nuts in a food processor until finely chopped, then set aside 2 tablespoons of the mixture.
  • Lay down one sheet of filo pastry on a flat surface and brush it with melted butter. Add another sheet of filo on top and continue layering with a third sheet. Spoon 1/4 of the peanut butter and Nutella onto the filo, leaving a 2cm border. Gently spread the mixtures over the filo. Press the filo stack into the pan, spread-side up, letting it overhang. Sprinkle 1/4 of the nut mixture and choc chips on top.
  • Continue layering the ingredients in the previous step three more times. Combine the remaining 3 sheets of filo together with butter, place over the filling, roll up the edges and tuck into the sides of the pan. Brush with more butter. Use a small knife to create a diamond pattern on the top of the baklava. Sprinkle with the reserved nut mixture.
  • Bake until golden brown, about 20-25 minutes. Allow to cool for 30 minutes, then dust with icing sugar before serving.
