Delicious scones with crispy bacon, spicy chiles, and Cheddar cheese - perfect for any mealtime.
Ingredients:
  • 1 1/4 cups white whole wheat flour
  • 1 cup cornmeal
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold butter, cut into 8 pieces
  • 1/4 cup milk
  • 1 egg, beaten
  • 3/4 cup shredded Cheddar cheese (3 oz)
  • 1 can (4.5 oz) chopped green chiles, undrained
  • 2/3 cup crumbled crisply cooked bacon, if desired
  • Honey, if desired
Instructions:
  • Preheat the oven to 425°F and grease a cookie sheet with shortening or cooking spray. In a large bowl, combine flour, cornmeal, sugar, baking powder, and salt. Use a pastry blender or fork to cut in the butter until the mixture resembles coarse crumbs. Stir in milk, egg, cheese, chiles, and bacon.
  • Transfer the dough onto a lightly floured surface and knead gently 10 times. Shape the dough into an 8-inch round on a cookie sheet, then cut it into 8 wedges without separating them.
  • Bake the scones for 18 to 23 minutes until golden brown. Transfer them from the baking sheet to a cooling rack right away and gently separate the wedges. Enjoy warm with a drizzle of honey.
