Spicy cheesy cornmeal scones ready in 40 minutes. Perfect with warm honey drizzle.
Ingredients:
  • 1 1/4 cups Gold Medal™ all-purpose flour
  • 1 cup cornmeal
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/3 cup firm margarine or butter
  • 1/4 cup milk
  • 1 egg, beaten
  • 3/4 cup shredded Cheddar cheese (3 ounces)
  • 1 can (4 ounces) chopped green chilies, undrained
  • Honey, if desired
Instructions:
  • Preheat oven to 425°F and lightly grease a cookie sheet.
  • Combine flour, cornmeal, sugar, baking powder, and salt in a large bowl. Work in margarine with a pastry blender or two knives until the mixture resembles coarse crumbs. Add milk, egg, cheese, and chilies, and mix well.
  • Transfer the dough to a lightly floured surface. Gently knead it 10 times. Shape it into an 8-inch circle on a cookie sheet. Cut it into 8 wedges without separating them.
  • Bake for 20 to 25 minutes until golden brown, then immediately remove from the sheet and gently separate wedges. Enjoy warm with honey.
